Roumy (also known as rumi, romy, roomi, gebna romi) is an Egyptian unpasteurised hard cheese made with cow's milk or a combination of cow and buffalo milk. Roumy production dates back to ancient Egypt when it was often presented as a offering to the gods.
Today, roumy has huge significance in Egyptian culture and is often served at celebration, festivals, and given as a gift. The cheese is versatile and may be melted on pitta breads, added to pastries, etc.
Roumy has a sharp, salty taste; sometimes peppercorns are added for flavour. It is often sold sliced and may vary in taste and texture depending on how long it has been left to age. Roumi is a rich source of calcium and protein.
