Pine Drink

The main Pine Drink ingredients are pineapple flesh, or just the skins, water and sugar with a few spices (we used cinnamon, nutmeg, and chili). It's quite refreshing served chilled. We also used panela or jaggery (whole cane sugar). Both are easy to find Caribbean and Asian stores. It's cheap to make too, especially if you use leftover pineapple skins.

Submerge the washed pineapple skin in a jar of water, add the sugar and spices. Cover the mouth of the jar with some kitchen towel or muslin secured with an elastic band to stop flies. Leave in a warm space for 2-3 days. Decant into bottles with lids and keep refrigerated.

Adjust the sweetness according to your taste. It gets more sour the longer you ferment it. This drink has a short shelf life, the aim is to drink it within a couple of days of fermenting. It's possible to make vinegar from the Pine Drink if left for long enough.
