Nipipa

Nipipa (also known as surra in Portuguese) is a non-alcoholic fermented rice drink from Quelimane, one of the few rice-growing regions in Mozambique. So, whilst there are other fermented drinks made with grains across the diaspora, Nipipa is specific to Quelimane and Chuabo culture (a Bantu tribe). Quelimane has grown rice the longest in Mozambique; before the Portuguese colonised (from when they traded with India). Nipipa is often served at celebrations and wake ceremonies.

Ingredients
5 cups of water
3/4 cup ground rice
10 tbsp of sugar

Method
1. In a cup add a little water to the ground rice, stir it until it makes a smooth mixture. Set it aside.
2. Add the 5 cups of water into a pan. Bring to a medium to high heat. Just before the water starts boiling, add the ground rice mixture. Stir it to make sure no lamps form .
3. Keep stirring it for about 5 minutes until the mixture has thickened up. Not too thick, you want it runny.
4. Add the sugar and let it cool .
5. Cover and leave to ferment for at least a day at room temperature. Your Nipipa is now ready to serve. Enjoy.
