Ferment #05

Mauby

Mauby (also known as madi, maví, mobi, mabi, and maubi) is a tree bark-based drink grown, and widely consumed across the Caribbean. Often drunk for its health benefits, mauby is rich in anti-oxidants, and also has anti-inflammatory properties. The bitterness of mauby is an acquired taste that divides opinion!

Guyanese and Puerto Rican mauby is fermented. It is made by boiling the bark, spices (e.g. cinnamon sticks, star anise, and bay leaves), and sugar in water. The cooled mixture is then left to ferment for a couple of days before drinking. We bought mauby bark from Esme's Organic & Herbal Product in Market Row, Brixton. We bought mauby drink from Umana Yana, 294 Croxted Road, London SE24 9DA.
