Kenkey

Kenkey (Also known as dokono, komi) is a staple swallow food eaten in Ghana, Togo, Benin, and Cote d'Ivoire and is made with fermented cornmeal. The cornmeal is mixed with water and fermented for several days and has a tangy flavour. Once fermented, it is wrapped in banana leaves, plantain leaves, or corn husks, then boiled to make its texture more solid. Kenkey is usually served with fish, meat, or stews. We bought our kenkey from Nyame Bekyere Food Shop in Brixton.
