Harissa

Harissa is a hot pepper paste that is consumed widely across North Africa. Recipes vary from household to household and region to region. Harissa’s main ingredients are roasted red peppers, sun-dried chili peppers, garlic, olive oil, and spices. Some use fermented onions and lemon juice to enhance its flavour. Its origins date back to the 16th Century when chili peppers began to be exported from South America to North Africa. Tunisa is the largest producer of harissa, and the UN has designated the condiment as an Intangible Cultural Heritage recognising its significance as part of Tunisian cuisine and culture.
