Cocoa Tea is made throughout the Caribbean. All chocolate is fermented, we will post more about cocoa from across the diaspora.
Cocoa Tea is made from cacao pod seeds. The seeds are left out in the sun to dry for weeks to months, during this time fermentation takes place. This removes the moisture and helps the flavour develop. The seeds are then roasted, ground, and then shaped into cocoa balls or sticks.
To make the tea, grate some of the cocoa into hot water, coconut water, spices, heat, strain and sweeten to taste. We bought the natural cocoa sticks at Esme's Organic & Herbal Product in Market Row, Brixton.
