Ceviche originates in Peru and is popular in Latin countries bordering the sea and in Costa Rico. It is made from fish in marinated citrus juice, lemon or lime. The citric acid in the fruit juice effectively 'cooks' the fish. It is served with tortillas and flavoured with chili peppers, spring onions, and coriander. We discovered Pura Vida, based in Stockwell, one of the few Costa Rican restaurants in London. The owners informed us that many places do not make ceviche due to the short period it takes to 'over cook' and to spoil the firm texture of the fish. This was our first time trying ceviche - we will be back for seconds!
