Cane Vinegar

Cane vinegar is made from fermented and distilled sugar cane. It is often used in Caribbean cookery as a marinade for fish and meat, for pickling vegetables, and as the base for sauces (e.g. Escovitch sauce). It has a neutral taste, so is versatile in various cooking recipes. It is widely available in African Caribbean stores.
