Greetings Fermenting Cultures family from a sweltering London!
We're super excited to have received a special delivery of Senegalese raw honey from our new friends Proux Food! This raw African honey has a distinctly rich, tangy, smoky flavour. Raw honey is unpasteurised, retaining natural enzymes, pollen grains, traces of propolis and bees wax, which makes rich in nutrients and suitable for fermenting.
We're looking forward to creating some new and traditional ferments with it. We’re thinking of some pan-diasporan beverages; maybe mead, switchel, or a moringa infused drink. So, watch this space over the coming weeks.
